Clare’s Family Homemade Burger

Who doesn’t adore a great burger? They are tasty, family friendly and even when you are making them yourself with fresh ingredients, they give you that comfort food feeling.

Makes: 4 servings

Preparation Time: 15 minutes

Total Time:  45 minutes

Ingredients

  • 450g 95% lean minced beef
  • 50g Mr. Crumb Breadcrumb
  • 1 egg
  • 2 cloves of garlic crushed
  • 1 red chilli finely chopped
  • 1tbs cracked black pepper
  • 3-4 carrots cut into chip like pieces
  • 3-4 parsnips cut into chip like pieces
  • pinch of paprika
  • 2tbs coconut oil
  • 2-3 sliced tomatoes
  • 1/2 a sliced cucumber
  • Lettuce leaves
  • 3tbs tomato chutney, I used ballymaloe
  • 6tbs of low fat natural yoghurt

REPARATION

1/ place the garlic, chilli, black pepper , Mr. Crumb Breadcrumb , minced beef and egg in a bowel, mix well, shape into burger’s, place on a plate and pop in the fridge to chill prior to cooking, if no time then 10-15 minutes will do but best if you can leave for 30+ minutes.

2/ Place your cut carrots and parsnips onto oven trays, sprinkle with paprika, top with coconut oil and place in a pre heated oven for 20-25 minutes on a medium heat.

3/ Place your burgers on another baking tray and bake for 20-25 minutes also, this will depend on how thick you have made your burgers

4/ Slice your lettuce, cucumber’s and tomatoes and arrange on the serving plates

5/ Mix the yoghurt and ballymaloe and serve on top of your cooked burgers in the image

Top Tip: I make batches of these burgers and freeze them for day’s I know time is not on my side.
