Clare’s Silky Smooth Lemon Possets

This weekend was like the calm before the Christmas party storm, so what better way to spend it that creating new recipes for my Clare with the Hair, Tasty Thursday recipe readers. I am beginning with the end today, the end as in the dessert and for many this is often the down fall when you have a big family to feed at Christmas. A lot of effort goes into the Turkey, Goose or whatever meet / meatless main you are serving so the last thing you want is to spend hours creating dessert, this is where Clare’s Silky Smooth Lemon Possets come in, I have served these with little lemon and almond fingers but feel free to serve some shop bought shortbread’s instead.

This Dessert is so simple it is nearly a crime to call it a recipe, it requires 3 ingredients, takes 15 minutes to make and is ridiculously delicious.

Makes 4 servings

Takes 15 minutes

Setting time (1-2 hours)

Ingredients

For the Possets

  • 600mls of Double Cream
  • 150g Caster Sugar
  • Juice and rind of 2 Lemons

For the Biscuits:

  • 150g plain flour
  • 150g ground almonds
  • 75g caster sugar
  • 1 egg yolk
  • 1 tbs vanilla essence
  • 50g Butter
  • Rind of 1 lemon

Preparation

1/ Bring the Cream and sugar to the boil slowly and cook for 10 minutes, remove from the heat

2/ Juice and grate the rind of your lemons

3/ Add the juice to the cream and whisk for 20-30 seconds

4/ Pour into your serving glasses and place in the fridge

For the Biscuits:

1/ Mix the dry ingredients with the sugar

2/ Add the wet ingredients and mix to form a ball, flatten out , cover in cling film and place in the fridge for 30 minutes.

3/ Remove, roll out to 1/2 an inch thick, cut fingers out and place on a baking try, bake until lightly golden and remove. This will only take 6-8 minutes so keep and eye on them.

I told you that these were very easy but once you taste these you and your guests will never think they were this simple and will be begging you for the recipe. They make for a perfect light finish to what is a very heavy dinner. I do love the mince pies and Christmas puddings but I much prefer to nibble on these with a glass of something nice while watch some Christmas TV later in the day.
