The day’s are flying , day 17 already and the feed back from you all is incredible, Thank you for the kind emails and fantastic feed back, Week 4’s menu has been put together and I have included item’s requested from you , so if you want to recommend something, so let me know and if we can make a good, home made, great for you version, then we will.
Today it is my Lemon & Chive Salmon with Spicy potato cubes, This is a quick option for the evening your really need something tasty but time is just not on your side.
Makes: 4 servings
Preparation Time: 15 minutes
Total Time: 35 minutes
- 400g Salmon fillets
- 400g Potato, peel and cube
- 400g Mixed Fresh Veg
- 1 lemon, half juiced , half served as segments
- 2tbs of chopped Chives
- 2tbs of Coconut oil
- 1tbs of Paprika
- 1tbs chopped Parsley
- 1tbs of Curry Power
1/ Peel and cube your potatoes, as they are cubed they cook in 15-20 minutes, place on a baking tray, top with coconut oil, paprika, parsley and curry powder, mix and place into a hot oven.
2/ Place your vegetables into a steamer , I used colorful carrots and mangetout, I steamed these for no more than 12 minutes.
3/ Place your salmon onto a baking tray, top with the juice of half the lemon and place in the hot oven for 6-9 minutes, it will depend on the thickness of your salmon but do not over cook.
4/ Place the potato’s, vegetables and salmon on a plate, top with chopped chives and a wedge of lemon.
