Life can be so busy these days and the time to sit as a family and enjoy a meal is all so important and none more so than a Sunday Lunch but who has 5 hours to potter about the kitchen on a Sunday morning? Not me that is for sure, this is where my Simple yet Super Tasty Sunday Lunch has you sorted. You will have this on the able in less than 2 hours.

Ingredients: Simple yet Super Tasty Sunday Lunch
1.5kg Turkey – I use a boneless breast joint
8 Streaky Rashers
1lb Sausage meat
200g Bread crumbs
1 large white onion
Glass White Wine
Method – Simple yet Super Tasty Sunday Lunch
1: Turn your oven on and leave to heat while you prepare the turkey. Line a oven tray with foil, place the turkey into this, cover with the streaky rashers and pour in the glass of white wine and cover with more foil. Place in the pre heated oven 180C for 75 minutes.
2: Dice the onion and cook in a nob of butter on a medium heat until soft, place to one side to cool and mix the sausage meat and breadcrumbs, once the onion is cool add this to the breadcrumb and sausage meat mixture, pop into a loaf tin and cover with foil.
3: Peel your potatoes and vegetables – for the roast potatoes bring the potatoes to the boil and then reduce the heat to medium for 5-6 minutes, then using a slotted spoon remove those you want to roast, leave in those you wish to mash, place on some kitchen paper and leave to steam . The carrots and parsnips get cooked together and then mashed.
4: After 75 minutes, take out the Turkey, remove the foil and pour the wine , cooking juices into a saucepan, leave the Turkey uncovered and return the turkey to the oven for another 15 minutes.
5: Add 250mls of chicken stock to the wine and cooking juices, add 1-2tbs of cranberry sauce and reduce this down then add 1tbs of cornflour to thicken.
6: Place the potatoes for roasting onto an over tray and add these to the oven for 15 minutes, add the sausage meat stuffing at this time, remove the potatoes, turn and place back in for another 15 minutes. At this time remove the Turkey and remove the foil from the sausage meat stuffing.
7: Mash the potatoes, root veg and warm the plates and enjoy!
