Clare’s Sticky Summertime Chicken 

I just love Chicken, it is so versatile and whenever you have some in the freezer you can always throw together some sort of dinner. This is Clare’s Sticky Summertime Chicken, it is flavored with lemon, thyme, honey and cracked black pepper served with my scrumptious and tasty slightly cheesy, potato cakes on the side. I challenge you to find a meat eater who doesn’t love this tasty dish! This dish can be on the table in 30 minutes, so pop the chicken in a container and mix well with the marinade, leave in the fridge all day and if like magic, you walk in the door and the dinner is good to go.


Preparation time 10 minutes (excluding marination)

Chicken Marinade

2-3 tbs fresh thyme leaves

1/2 tbs cracked black pepper

Zest and juice of one lemon

2 tbs clear honey

4 large chicken fillets / alternatively use skinned chicken thighs


Potato cakes

400g potato’s

2-3 spring onions finely sliced

1/2 a grated clove of garlic

1 tbs melted butter

salt and pepper

1 egg yolk

50g of finely grated Dubliner Red Cheddar cheese 



200g cherry tomatoes

2nd 1/2 of the grated garlic

1 tbs olive oil

pinch of Salt/ pepper and sugar

200g broccoli


1/ Mix all the marinade ingredients together, add the chicken, cover, place in a fridge and leave for min 1 hour, best left all day. remove just before cooking and place on a  baking sheet and pop into a hot oven for 15-20 minutes until the chicken is fully cooked through.

2/ wash and steam your potatoes with the skins still on, cook until light and fluffy.

3/ Remove the potatoes from their skin and place your cooked potato’s in a bowl, add the butter, salt, pepper , onions, egg yolk and cheese and mix well. Shape in patty’s and place on a plate to either fry until golden on each side or place in an over for a lower fat option.

4/ Steam your broccoli until tender, serve with a pinch of salt.

5/ Place the cherry tomatoes in a roasting dish, top with oil, salt, sugar and pepper and the second 1/2 of the garlic, pop in the oven until soft and almost bursting.

Simply serve one chicken fillet of two thighs per person, with all the trimmings, pour juice from the tray you cooked the tomatoes in all over the dish and enjoy!
