On Sunday I was craving something homely, something warm and something that felt like a serious comfort food but is really very good for you and this is when we decided a homemade pie ticked all the boxes and this Homemade Chicken and Leek Pie did not disappoint. It was clear plates all around. Try this Homemade Chicken and Leek Pie – Family Meals for yourself and share the results with me.

My recipe feed 3 but add to or take away to feed more or less people.
Takes less than an hour from start to finish.
- Ingredients:
- 200g Chicken Breasts
- 3 Large Leeks
- 150g Garden Peas
- 1 Glass of White Wine
- 150ml Chicken Stock
- 1 tsp Cornflour
- 2 Cloves of crushed Garlic
- 2tbs Wholegrain Mustard
- 1tsp Cracked Black Pepper
- 1tsb Butter
- 1/2 Sheet Ready Rolled Puff Pastry
- 1 Egg

Method:
1/ Chop and wash the Leeks and place in a heavy bottomed pan with the butter, have this on a medium heat cook until the leeks are soft
2/ Chop the chicken in to 1/4 inch pieces and add this to the leeks – Cook until the Chicken becomes white
3/ Add the Garlic, Mustard and Pepper – cook for 1 minute
4/ Add the White Wine and reduce this down to 1/4 of a glass – turn the heat up for this
5/ Add the Chicken stock and reduce this down to less than 50mls – turn the heat up for this
6/ Add the Peas – turn the heat back to medium
7/ Mix in the Cornflour and cook for 3 minutes on a medium heat
8/ Place into your pie dish and allow to (I used a 1lb loaf tin)
9/ Unwrap the Puff pastry and Cut to size – place onto of the cold chicken and leek mixture.
10/ Beat the Egg and use a Pastry brush to glaze the pastry
11/ Place in a warm oven 180 for 35 minutes
12/ Serve with a nice green salad and a cold glass of wine! Enjoy…….
