Rich Beef Stew with Carrots Vichy

Is there anything nicer that a mountain of buttery mash topped with a rich beef stew? to me there is not. My Rich Beef Stew with Carrots Vichy tick all the comfort food boxes and then some for me. This is extremely simple, yes it takes a little bit of time but it is totally worth every single second.

The recipe I am sharing feeds 3 with leftovers for lunch the next day.



  • 800g of Beef (use any you like, relatively cheap stewing steak is fine)
  • 3 Large White Onions (Cut into rough chunks)
  • 6-8 sprigs of Fresh Thyme
  • 500ml Beef Stock
  • 250mls Red Wine
  • 1 Tin of Chopped Tomatoes
  • 2tbs of Flour
  • 2tbs cooking oil
  • 1/2tbs cracked black pepper
  • 1/4tbs of dried Chili Flakes
  • 700g Potatoes
  • 80g of Butter
  • 250g of Carrots
  • 1tbs Honey
  • 1 clove of Garlic (crushed)
  • Season to your taste


1/ Coat the chunks of beef in the 2tbs of flour with some cracked black pepper, Add the oil to your pan and Fry the beef off in small batches to brown. Once all the beef is browned set aside.

2/ Add your rough cut onions to the pan, sprinkle in a tsp of salt, fry on medium for 4-5 minutes, soften the onions but don’t brown them. Add the 250mls of Red wine and reduce by 1/2. Return the beef into the pan, add the garlic, Chilli Flakes, Thyme and pepper.

3/ Once the above is combined add the tin of chopped tomatoes and Beef stock, Stir well, bring up to boiling and reduce down to a low simmer (this is no2 on my cooker) Check every 1/2 hour or so but other that a stir leave this for at least 3 hours to cook. I cook my on the hob but you could at this stage place it in the oven.

4/ For the Carrots Vichy Style, Cut your carrots in large batons, place in a flat pan, cover with water, add 50g Butter, 1tbs honey, bring to the boil and reduce to a simmer until the water has evaporated and you are left with glazes, buttery, sweet carrots.

5/ The potatoes I just boiled in plenty of salted water until soft, drained and mashed with lots of butter using my Smeg Potato Ricer ( You can See my One Here) not an AF link.

To serve I warm a flat bowl, add a mountain of creamy mash, top with the Rich Beef Stew and serve the Carrots Vicky on the side.
